Energy Balls (no-bake)

Whether or not these really produce energy, I'm not going to be the judge of that. However, when I'm hungry or want something sweet, these always do the trick.

 

 

So what did I do with the almond butter I attempted the other day? I made these balls and they. are. delicious. I have made them countless times, but have never done them with almond butter and its a win! I actually like them even better and somehow I feel they are a just a bit more healthy than when done with peanut butter. 

 

INGREDIENTS:

 

- 2 Cups Old Fashioned Oats

- 1 Cup Almond Butter

- 1/3 Cup Honey

- 1/2 Cup Ground Flax (adds great health benefits- Omega 3s, antioxidant, & fiber)

- 1/2 Cup Coconut (unsweetened)

- 1/2 Dark Chocolate Chips

 

(Makes about 26 balls depending on how big you roll them)

 

 

This recipe is super simple, you just dump them all together and then stir. There is no order and its super low-stress. A lot of them time I will just eyeball the recipe without even measuring. But, for those of you who like exact measurements, I thought I'd help you out.

 

 

In my case, it was hard for me to find unsweetened coconut, so I improvised. I love the bare coconut chips, so I figured I would just stick with that and grind them up a little smaller.

 

 

Also, the past two times I have been to target they have been out of dark chocolate chips. I resulted to buying a bar and chopping it up... no big deal! Also, I ended up liking it way better because my husband and I love 70% or higher cocoa chocolate, so, I was able to choose a really high percentage instead of just regular dark chips. Making lemonade out of lemons... Living on an island, you have to take what you can get. 

 

 

 

After mixing it all together, it will be helpful to put it in the refrigerator for about 15-20 minutes. The colder it is, the easier it is to roll into balls (it can get quite sticky) Don't leave it too long or you will have to let it "thaw" in order to roll them.

 

Tip: running your hands under water and then halfway drying them help way helps with rolling the balls without all of it sticking to your hands. Especially about halfway through rolling them your hands become warm and it gets extra sticky.

 

 

I always have just a little bit left in the bowl thats hard to roll, usually a lot of the chocolate chips. No worries, either use it as granola or simple eat the leftovers :)

 

 

After they're all rolled simply store, and enjoy!

 

 

*Store them in the refrigerator and they will be good for at least a week, if they make it that long :)
